Cool Recipes for Hot Nights!

Mexican Chicken Casserole
INGREDIENTS
1 (5 ounce) can chicken chunks, drained
1 (4 ounce) can diced green chiles
1 (10.75 ounce) can condensed cream of mushroom soup
2 cups shredded Cheddar cheese
2 tablespoons dried minced onion
1 Tablespoon of Southwest Chipotle Seasoning
1 1/4 cups water
2 cups instant rice

DIRECTIONS
In our Mix N Pour Container (# 619), combine the chicken, chiles, soup, cheese, onions, Southwest Chipotle and water. Stir using our Silicone Spatula (#1315).

Pour the mixture into our Heat N Serve 8 1/4C oval container (#1187).
Add the rice.
Cover the dish with the lid microwave for about 15 minutes (depending on the microwave).

Spicy Corn Salad
Ingredients
1 Can of Corn
1 Can of Black Beans
1 Can of Rotel (Diced Tomatoes and Chiles)
1/2 Red Onion or green onion (your preference)
1 Tablespoon of Southwest Chipotle

Directions
Using our ergonomic can opener (# 1288) open the cans. Drain all canned contents into either our Double Colander (#779) or our Flat-Out Colander (#504). Using the Mini-Chopper (#1256) diced the red onion. Combine all ingredients with the Southwest Chipotle Seasoning into our Ice Prisms Medium Bowl (#901). Place lid on bowl and chill for at least 10 minutes.

Chocolate Coffee Cake
Ingredients
I box of Chocolate Cake
Cold Black Coffee
1 Container of Cool-Whip

Directions
In our Mix N Stor Container (#619) mix the cake as directed on the box. With the exception of the water. In place of the water use the same amount of the cold black coffee. Spray the Oval Heat N Serve (#1187) with Pam Cooking Spray. Using the Silcone Spatula (#1315) scrape the cake mix into the Oval Heat N Serve (#1187). Microwave for 7-10 minutes checking after 7 minutes.
Remove the cake and let cool for about 10 minutes. Cube the cake and place it into the Ice Prisms Medium Bowl (#910). Alternating between Cake and Cool-Whip. Pour 1 1/2 Cups of Cold Black Coffee over cake and top with Cool-Whip. Sprinkle with ChocoJava Seasoning.

Cooking Cool


Fajita Fiesta
6 oz. chicken, cut into thin strips
1 cup sweet green pepper sliced into strips
1 cup sweet red pepper sliced into strips
1 medium onion (chopped)
1/2 cup salsa
1 package of flour tortillas

In microsteamer dish combine first four ingredients. Cover & chill 20 minutes or up to 4 hours. Transfer mixture to colander. Place in colander in microsteamer dish with 2 tablespoons of water. Cover & microwave on high for 6 to 8 minutes or until meat is tender, stir twice. Warm tortillas & serve.

Recipe of the Day

Pizza Dip
Makes 8 servings
1 8 oz. package of cream cheese
1 jar pizza sauce
1 tsp. Simple Indulgence™ Italian Herb
Mozzarella cheese
Assorted toppings of choice, pepperoni, black olives, green pepper
Soften cream cheese in base of Oval Microwave Cooker. Spread cream cheese
over bottom of dish. Top with remaining ingredients in order and top with choice of
toppings to taste. Cover and microwave on high until cheese is melted and
bubbly—about 2 minutes.

This is a Tupperware recipe. You know you have a winning dish when your friends call you before a party and ask if they can bring your dip to the event. Last time we had a get together two friends called and said, "Hey, I was wanting to bring your dip to the party, can you give me the recipe?" Sorry Guys! I'm bringing my dip to the party. LOL
